The Best Red Velvet Cupcakes...With a Secret Ingredient!
Beets: Love 'em or hate 'em? I used to be firmly in the latter camp.
As a kid, I was not a fan! I wonder why, because they're actually sweet. I guess I was scared off because they are a vegetable, and as a kid, that often meant something not necessarily delicious. Candy is sweet, so you get my drift.
Anyhow, for my Mom to get me to eat them, she would say, 'You'll love beets because they're just as sweet as you (aww)!' Who could say no to that kind of parental persuasiveness? So I ate them, and guess what? To this day, I love beets. So thanks, Mom, for introducing me to beets the sweet way.
Therefore, inspired by my newfound appreciation for beets, I bought a bag of beets last fall (thank goodness for cold cellars) and I wanted to bake something for Valentine's Day... And that's when it hit me: beets (say what?) might just be the secret ingredient to these delicious cupcakes!
